Summer Spring Rolls

These spring rolls are so good !!  A light option for lunch or dinner, plant based, and raw.  This for me is the  best scenario when preparing something light: to manage a healthy meal, raw when possible, tasty and pleasurable to eat.

When choosing healthy we often need to go that extra step to eat “different” because most of the options that are offered to us are far from simple and clean. This recipe is an example of something worth that special preparation- made with fresh vegetables and rice paper only.

I have to be honest… at first it was a bit challenging to roll the spring rolls without breaking the rice paper or bursting the vegetables everywhere. The trick is to soak the rice paper for not too long, 20-30 seconds in warm water, and then season it on a D-R-Y surface. Another great tip that I found out later is to use lettuce in your filling to help hold everything together. I am still learning but happy with how these delicious rolls turned out. Planning to keep practicing.

Recipe for 6 spring rolls:

  • 6 or more rice paper wraps (I found this in my local supermarket, in the asian cuisine section)
  • 1 yellow bell pepper cut julienne style
  • 1 carrot cut julienne style
  • 1 cucumber sliced finely in round shape or julienne style
  • 1 head of lettuce
  • 1 cup of kale
  • 1/2 avocado sliced
  • 1 cup of alfalfa sprouts

First soak the rice paper in warm water then lay on a dry surface. Decide the combinations you want for your spring rolls. Lettuce, carrot, avocado,bellpepper and alfalfa was one of my favourites. The avocado tastes amazing in the roll.  Place the chosen vegetables for the stuffing in the middle of the paper. First fold the bottom part (don’t overstuff it will be more difficult to close), then fold one side and roll towards the other. Finally close the top part.

Once you get the hang of it- its not too difficult and there are so many different combinations that can be created I had these with a tahini dressing:

Recipe dressing:

  • 2 tbsp of tahini
  • juice of 1/2 lemon
  • 2 tsp of soy sauce
  • 4 tbsp of water

Mix all the ingredients throughly and you have the perfect sauce for your spring rolls. The sauce is kind of a must for these rolls. If you find the sauce too thick you can always add more water. Enjoy !
