Kale Mustard Salad

Completely raw, light, and easy to digest. This salad dressing is very easy to prepare and you probably have all the ingredients right at home. Kale is one of my favourite vegetables although when seen raw it looks very rough and not tasty at all.

The trick is to marinate it.

In case you don’t have kale this dressing can be easily made with lettuce or spinach. You still want to be careful to not create a too fatty dressing because that will ruin the whole purpose of having a healthy salad. Mustard is a great way to season it without adding too many ingredients.

Recipe:

  • 3 cups of Kale
  • 1 cup of spinach
  • 1 tbsp of mustard (check the ingredients: no sugar or any other weird things)
  • 1 tbsp of water
  • salt and pepper
  • 1/2 cup of walnuts
  • 1 bell pepper chopped

Remove the kale from the stems and wash throughly with the spinach. Mix in a separate bowl the mustard with water, salt and pepper. Now the trick to marinate it is to massage the kale with the mustard dressing. Literally dig those hands in. You can also mix it throughly with a salad spoon but it turns out much better if you do it with your hands. Then add your favourite toppings. I used walnuts and bell pepper they make a great combo with this dressing.

Eat mindfully, which means chew your food thoroughly and sit down to eat without any distractions. Enjoy !
